The application of innovative technologies in bioactive compounds isolation from organic waste in the wine production

Financial structure:

(EU Structural Funds): Total 547.665,80 €

EU is funding 85% of the project value while Ministry of science, education and sports is funding 15% (as a national contribution).

Project means are divided as follows:

Applicant (FFTB) – 492.899,22€; Partner (AGROLAGUNA) – 54.766,58 €
For the purchase of new equipment 197.150,26 € ie. Around 40% of total project value assigned to the Applicant.

Equipment that will be obtained:

  • freeze dryer with heated plates
  • high pressure accelerated solvent extractor
  • ultra low temperature freezer

Project goal:

Specific project goal: development and application of conventional and new technologies for the extraction (high pressure and microwave assisted extraction; extraction by supercritical CO2) and isolation of bioactive compounds (BAC) from the organic waste resulting from wine production (OWWP) as well as their potential application as raw material or semifinished product in further processing (for functional food production, pharmaceuticals/cosmetics etc.). The conditions for extract and phenolic compounds powder production by spray drying will be optimized and also the possibilities of its application in model and real systems.

Through the aquisition of the planned equipment the science and research capacity of FFTB in technology transfer and commercialization of research results will be increased. That will make possible the fullfilling of the general goal through the additional strenghtening of the bond between the scientific and bussines sector with the aim to improve the existing and to develop new ecologicaly acceptable technologies for the exploatation of biological potential of organic waste from wine production in order to lessen/annull the influence on the enviroment.

Project activities:

  1. Optimization of the phenols extraction procedures from OWWP;
  2. Extraction with purification and fractionation of fluid extracts and defining their composition and stability during the purification process;
  3. Optimizing of production of the obtained extracts concentrate/powder;
  4. influence of innovative processes on nutritive and functional composition of the extracts;
  5. Development of the technology design and the feasibility study of the processing facility for the isolation of phenols from OWWP;
  6. Scientific and professional workshops and final presentation of the project results;
  7. Dissemination of the results, project marketing and visibility

Project purpose and significance:

Determining of the technological solution for processing of organic waste from wine production with the final aim to decrease the harmful effects to the environment. Strengthening of the scientific and research capacity of the Faculty of Food Technology and Biotechnology by acquisition of the new equipment and through the obtained know-how insuring the more efficient transfer of knowledge from scientific and research to the production sector (small and medium enterprises dealing with wine production).

Most of the countries in the region have developed wine industry and are also being confronted by the problems of the grapes and wine waste disposal. Therefore the results of this research through the development and application of new technologies as well as know-how could have the significant influence on the productivity of small and medium enterprises (SME) and the economy of the region, positioning the Republic of Croatia as an ecologically responsible country and the region leader of the development of the sustainable economy.

Project sustainability: Sustainability will be achieved by: (i) collaboration with the other faculties of the University of Zagreb and institutions form EU from the field of biotechnical and biomedical science aiming to position FFTB as a leading institution for the handling/exploration of food industry waste on the national and regional scale; (ii) joining to EU projects dealing with similar issues; (iii) cooperation of FFTB and agricultural sector, small and medium enterprises (wine, fruit, vegetables and Mediterranean cultures etc. producers). Portfolio of the scientific and investigation works and their potential of the application to industry.

Relevance of the research programme for the economy:

With the intent for the application of newly developed methods of organic waste processing in the production sector, the project research team in collaboration with the partner institution Agrolaguna d.d. will create preconditions to implement the know-how into the small and medium enterprises that deal with the wine production.

The exceptional significance of this project lies within the serious approach towards the food industry waste treatment that demands the application of various knowledge and skills which is the reason for the inclusion of the scientists with different expertize. Only by those means the comprehensive overview of the biological potential of the substrate that will be the subject of this project can be achieved.

It is important to stress that the problems with the handling of the waste containing various groups of high value compounds exist in other segments of the food industry. Implementation of this project will therefore create the basis for the research continuation on the other by-products of food industry e.g. olive oil mill waste, apple, cherry, tomato processing waste etc.
