Project Beneficiary: Faculty of Food Technology and Biotechnology
Project team (PT) is composed by the experts of the fur FFTB Departments (Department of Food Engineering, Department of Process Engineering, Department of Chemistry and Biochemistry and Department of Food Quality Control) i.e. of 16 researchers, assistants and professional assistants (4 full professors, 4 associate professors, 2 assistant professors; 4 senior assistants, assistants/scientific novices and 2 pHD professional assistants).
PhD Verica Dragović-Uzelac, Full Professor – head of project
She has published 28 scientific paper from the CC/WoS category mainly in the journals with high impact factor that were cited 280 times. She has long term experience in participating and leading the acknowledged national and international projects from the area of chemical properties, nutritional value and antioxidative activity of fruits, vegetables and their products. With her associates she carried out the project “Sour cherry Marasca (Prunus cerasus var. Marasca) as an ingredient for functional food“ that resulted in the cooperation of scientific and business sector and the design of the new industrial semi-product. Her role as the head of this project is to coordinate all activities including the financial ones that will be carried out throughout the implementation of the project and also to maintain close cooperation with all the members of the project team which is necessary for the successful project realization. Internal evaluation of the project results will se done in the end of each month and if needed corrective measures aiming to realize all activities planned by the project will be undertaken.
PhD Karin Kovaćević Ganić, Associate Professor- project associate and member of the SC (steering committee)
In the field of food technology and nutrition she has published a large number of scientific papers which have been cited over 270 times. The scope of her work is mainly related to the wine technology and analytics, wherein she participated in numerous studies related to the chemical composition of grapes and wines – polyphenolic and aroma compounds; impact of agroclimatic factors and enological practices on the composition and sensory characteristics of wines; antioxidative activity of grapes and wines, etc. She worked on a numerous national and international projects related to the wine technology and analytics. During the realization of this project she will manage the activities concerning the implementation of extraction of bioactive compounds from the organic waste from wine production (OWWP) using different methods.
prof.dr.sc. Branka Levaj – Full Professor – project associate and member of the SC (steering committee)
She has expertize in the research of the characteristics of the raw materials i.e. various fruits and vegetables and the influence of processing on the chemical composition, phisical, nutritive and sensory properties of the fruit and vegetable based finished goods. Long term experiance in the field of production process and storage influence on the bioactive compounds stability in industrial environment she has gathered through working and leading a wide range of national and international scientific projects. On this project she will coordinate the activities connected to the bioactive compounds extraction form OWWP using the clasical extraction methods and also the activities conneted to the behaviour of the obtained liquid and dry extracts in real and model systems.
PhD Damir Ježek, Full Professor – project associate and member of the SC (steering committee)
Expert in non-thermal processing of food, high hydrostatic pressure processing, ultrasonics (high and low intensity), drying, texture analysis and particle size analysis of materials. In his long term science career he was leader and partner on many international and national projects.
He will be responsible for design and conducting of the experiments associated with high hydrostatic pressure assisted extraction and OWWP processing, as well as for coordination of all activities related to this part of the research.
PhD Zoran Herceg, Full Professor – project associate and member of the SC (steering committee)
He has the necessary expertise and knowledge required for the development of new processing technologies of foodstuffs. In his scientific and research work he was occupied mostly with impact and influence of high intensity ultrasound, high hydrostatic pressure, pulsed electric field and non-thermal plasmas on properties of food products and drying of foodstuffs. He led numerous national and international projects, and he is currently the leader of one national scientific project “Application of electrical discharge plasma for preservation of liquid foods”. Also he is one of the founders of Croatian scientific center of excellence for “Research and Technology of Plasma”. He will be responsible for research of influence of non-thermal cold plasma on the structure and physicochemical properties of selected groups of phenolic compounds and part of research related to the spray drying.
PhD Sandra Pedisić – project associate and member of the SC (steering committee)
She has expertise in the areas of isolation and determination of bioactive compounds using spectroscopic methods; the application of drying processes in obtaining lyophilized and spray dried powdered products; the application of HPLC UV / Vis PDA / FD / RI and UPLC MS/MS methods in the determination of BAS in different substrates. She has participated in the implementation of scientific and professional projects and in university-enterprise cooperation projects.
In this project she will be responsible for the implementation of analytical methods for determination of bioactive compounds in extracts using UPLC MS/MS, and partly for the organization of workshops, project promotion and visibility.
PhD Senka Djaković, Associate Professor – project associate and member of the IT (investigation team)
She will be responsible for the purification, characterization and identification of the selected groups of phenolic compounds isolated from OWWP.
PhD Irena Landeka Jurčević, Associate Professor – project associate and member of the IT (investigation team)
She will be responsible for the determination of the biological potential of extracts, isolates and powders through in vivo methods that will determine the protective influence of OWWP to oxidative stress and hypercholesterolemia.
PhD Jasenka Gajdoš Kljusurić, Associate Professor – project associate and member of the IT (investigation team)
She will be engaged in the part of investigations dealing with the anticipation of the content of bioactive compounds isolated from OWWP based on their NIR spectra by the application of chemometric methods.
PhD Leo Gracin, Assistant Professor – project associate and member of the IT (investigation team)
He will be in charge for the organization of scientific-professional workshops that will be held during the project.
PhD Sandra Balbino, Assistant Professor – project associate and member of the IT (investigation team)
She will be in charge for the development of the technological design for the facility for phenols extraction, as well as the obtaining of the equipment and the activities connected to the project visibility.
PhD Danijela Bursać Kovačević – project associate and member of the IT (investigation team)
She will be engaged in the part of the research dealing with the islolation of bioactive compounds using classical extraction methods and also supercritical fluids and cold plasma assisted extraction.
PhD Natka Ćurko – project associate and member of the IT (investigation team)
She will be engaged in the isolation of bioactive compounds using different extraction methods, their fractionation, identification and quantification.
PhD Zoran Zorić – project associate and member of the IT (investigation team)
He will be in charge for the performance of the anatical methods for the determination of bioactive compounds in the extracts using HPLC coupled with UV/VIS PDA, as well as for the handling of the chemicals and consumables.
Mag ing Maja Repajić, scientific novice – project associate and member of the IT (investigation team)
She will be actively involved in the part of research dealing with the high pressure assisted isolation of bioactive compounds.
Mag ing Marina Tomašević, scientific novice – project associate and member of the IT (investigation team)
She will be actively involved in the conducting of investigations related to the microwave assisted extraction of bioactive compounds.
Zdenka Pelatić, technician – project associate
She will take part in the various activities dealing mainly with the isolation of bioactive compounds from OWWP by the application of different extraction methods and the determination of its biological potential by in vitro metods.
Željko Uzelac, administrative project handling
He will be in charge for the activities of promotion and visibility of the project and also taking part in the handling of the project finances.

She will be in charge for the defining and development of the isolation methods of bioactive compounds from organic waste from wine production.

He will be in charge of the selection and primary preparation of samples for the the isolation of bioactive compounds from organic waste from wine production.
Sabina Salamun, Enologist
She will be in charge for the sorting of the organic waste from wine production, sampling, packaging and storage until the analyses.
Danko Slade, Manager of the quality control systems, protection of environment and work safety
He will be in charge of the review and application of the new methods and developments in organic waste from wine production handling.
Danijela Kontić, Manager of the controling, plan and analysis department
She will be in charge of coordinating the activities between of the members of the Zagreb, Zadar and Poreč project teams and take part in the administrative work on the project.
